Blueberry-Peach Smoothie

My Dad brought me a big bag of frozen wild blueberries the other day, and I thought I'd use some of them in a smoothie. I already had a bag of frozen peaches and some vanilla frozen yogurt, so I came up with this experimentation.... I thought it was delicious, and my son gave it the kid-approval stamp. Look at that beautiful color..... and loaded with antioxidants to boot. This is a definite pick-me-up for the dreary winter months!

Here's what you need:

  • 1 Cup frozen vanilla yogurt
  • 1/2 Cup frozen, sliced peaches - partially thawed
  • 1 Cup frozen blueberries
  • 1/2 Cup ice
  • 6 oz. can pineapple juice
  • splash of vanilla extract

Throw all the ingredients in the blender, and process until smooth. Serves two.

  1. Could there be anything prettier than that smoothie in the glass? And if you can get the kids to eat it...definitely a winner.
