Amish Baked Oatmeal



This is a perfect Saturday morning breakfast during the cold winter months. It's so comforting and delicious. It has plenty of fiber and protein.... serve with some fresh fruit and a pat of butter, and you have a beautiful, satisfying breakfast. And if that didn't sell you on it, it's super-easy to make. It takes about 30 minutes to bake, but only about 5 minutes to prepare. I hope you'll try it! (Recipe adapted from www.mrbreakfast.com.)

Here's what you need:



  • 4 Cups quick-cooking oats
  • 2 Cups milk
  • 1 Cup light brown sugar
  • 2 eggs
  • 1/2 Cup butter, melted
  • 1 Tbsp. vanilla
  • 2 tsp. salt
  • 2 tsp. baking soda
Preheat oven to 350 degrees. Mix all the ingredients into a bowl. It will look soupy, like this:



Pour into a greased, 9"x13" baking dish:



Bake for 30 minutes. It's best served warm. This recipe will give you about 8 servings.
